- 4 sheets filo pastry
- melted butter (for brushing)
- chutney (tamarind, to serve)
- 3 Tbsp. ghee (or vegetable oil)
- 1/2 tsp. cumin seeds (each)
- 1/2 medium onion (small-, finely chopped)
- 1 1/4 tsp. ginger (finely grated)
- 2 tsp. green chilli (chopped, or to taste)
- 2/3 tsp. ground turmeric (each, ground cumin and dried mango powder)
- 1 1/2 tsp. ground coriander
- 1/3 tsp. Garam Masala (optional)
- 1/4 tsp. chilli powder
- 350 grams potatoes (boiled until just soft, cooled, peeled and chopped)
- 2 frozen peas (good handfuls)
- 1 tsp. salt
- 1 handful coriander leaves (chopped, and stalks)

These turned out wonderfully; I switch up the recipe with a plain 'veggie' samosa that I also have that is pretty much the same, but with fewer ingredients. This one is tastier, though.
