This turned out really well! It's bright and fresh. I weighed it down in the jar with some clean rocks wrapped in plastic wrap to keep the veggies below the liquid and that seemed to help. I let it sit for a week but also tried it 3 days in and it was great too, so probably depends on what flavor you're looking for. I would love suggestions for what to eat this with!
