- 1 lb. ground pork
- 1/2 lb. pork fat (back gound)
- 1 Tbsp. ginger (minced)
- 1 tsp. potato starch
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 1 tsp. white pepper
- 1 Tbsp. sesame oil
- 1 Tbsp. soy sauce
- 1 bunch chives (Chinese or regular, chopped)
- 1 pkg. won ton wrappers (white)
- 1 cup mustard powder (Chinese)
- 3/4 cup water
- 1/4 cup tahini
- 1/4 cup rice vinegar
- 1 tsp. sugar
- 1/2 cup canola oil
- 1/2 cup sesame oil
- 6 oz. baking soda
- 2 qt. water
- butter (As needed, softened)
- pretzel salt (As needed coarse)

Directions
- 1. Mix ground pork and ground fat back. Add Chinese chives, salt, sugar, white pepper and sesame oil mix thoroughly.
- 2. Take filling and place in wonton wrapper and seal with a little water on the edges.
- 3. Reserve for service.
