- 3/4 cup warm water
- 2 1/4 tsp. active dry yeast (one packet)
- 1 Tbsp. white sugar
- 1 Tbsp. vegetable oil (I use canola)
- 1 1/4 tsp. salt
- 1 egg
- 3 cups flour
- 4 qt. water
- 1/2 cup baking soda
- 1/2 cup dark brown sugar
- corn meal (for dusting the baking sheet)
- coarse salt (or Kosher, for dusting)
- 2 Tbsp. melted butter (or margarine, optional - if using butter, bread is no longer pareve)
- 1 egg yolk
- 1 Tbsp. cold water
- 1/4 tsp. white sugar
- 1/4 tsp. salt
- 2 tea (or smooth kitchen, towels, saucepan, large cookie sheet, or 1 large and 2 half sheets, 2 large spatulas, whisk, stovetop-safe roasting pan or oval pot with wide opening on top, parchment paper, pastry brush)
