- 1 jalapeño pepper (seeded and diced, omit for kids or non-spice lovers)
- 28 oz. crushed tomatoes (fire roasted, I love Muir Glen!)
- 15 oz. diced tomatoes (with the juice)
- 3 cups water (or vegetable broth)
- 2 Tbsp. chili powder
- 1 Tbsp. chipotle puree (optional, but recommended!)
- 1 Tbsp. ground cumin
- 1 tsp. salt (more to taste)

- chopped cilantro
- tortilla chips (Crushed)
- scallions (Chopped, or red onion)
- sliced olives
