Ok, made this last night and it was really tasty. I love pressure cooking! However. I think it needed more chunky vegetables as well like baby carrots and more mushrooms. I served with mashed potatoes (egg noodles would have been better I think) and it was really great - tender and savory... Next time, I will make a double batch so I can make a frozen dinner pack.
P.S. total time on this is distorted - it takes 10 minutes to chop the celery and onion, then brown veal in 2-3 batches (15m), then saute onion/celery (5m), boil liquid ingredients (2m), pressure cook (20m). And I like to make sure I have all my stuff measured and ready like the cooking shows... so give yourself a full hour... start to finish!
