I loved it a few too many tomatoes I added a variety of veggies . The chicken was very tender

It was good! Sort of plain, but maybe because I didn't have the chipotle in adobo to add (so sad). Great for a picky eater with that ingredient missing. I used only 1 t of salt, not 2, and used chicken stock instead of water. I had to cook it for a few more minutes though because the rice was still a little crunchy (hence the loss of a star). Next time I'll do the 6 minutes, then I'll let it slow release instead of quick release. I used an InstaPot manual setting for 6minutes on high pressure (then had to do it for 3 more minutes on high pressure after the quick release). The chicken was perfectly cooked and tender!
