- 1 tsp. chili powder (I used Penzey's Regular Chili Powder)
- 1/2 tsp. kosher salt
- 1 1/2 lb. skinless chicken thighs (boneless, cut into 1-inch pieces)
- 15.5 oz. black beans (rinsed, preferably low or no salt added)
- 1 cup long-grain white rice (uncooked)
- 1 cup salsa (I used Chi-Chi's Thick and Chunky Medium Salsa)
- 14.5 oz. chicken broth (preferably low or no sodium)
- 1/4 cup chopped cilantro (for serving, optional)
- 1/4 cup cheddar cheese (grated, for serving, optional)

This was fast, easy and delicious. I used a mango salsa and loved the taste. The next time I will add frozen corn in after I release the pressure. So many possibilities for the leftovers.

Super easy and tasty! We added two more cloves of garlic and used one small chicken breast, and it was plenty food for two hungry people.

The recipe turned out as expected. However, even though I used Pace medium picante sauce, it was bland but the sharp cheddar and cilantro added some much-needed flavor.

Easy to make. Easy to modify the ingredients. Awesome flavors! Choosing the right salsa can make a big difference.

This is an AWESOME recipe! I tweaked it a bit, I love smokey flavor so I added liquid smoke to the mix, Mild Restaurant-Style Salsa from Target and some taco sauce. I also added some Bold Chipolte seasoning(meant for steaks) right to the broth so it could hydrate a bit and add some more flavor to the dish. This will be on our rotation for sure!

Modified this recipe for a one-pot skillet sort of dinner and it was a winner! Cooked the chicken and onions and spices together, then added rice and broth and simmered for 10 minutes. Easy and delicious!

This is delicious! I added some corn kernels for a pop of sweetness. The kids all asked for it to go into the rotation.

loved it! added some frozen corn, with a hint of lime super tasty! definitely take the pressure of as soon as its done the rice can get soggy quickly.
