- 2 cups chicken stock (or water, *see footnote 2)
- 2 slices ginger
- 4 green onions (chopped, or 1/2 onion, chopped)
- 4 carrots (peeled and sliced)
- 2 zucchinis (peeled, seeded and sliced)
- 1 lb. mushrooms (stemmed and sliced)
- salt
- black pepper
- 4 chicken thighs (boiled)
- 2 tsp. rub (any chicken, you like, I used tandoori and satay spice mix in my recipe)
- sea salt (to taste)
- 1 Tbsp. vegetable oil
