- 2 lb. chicken pieces (with bones, I use a whole young chicken)
- 4 1/2 cups water (or half water, half chicken stock)
- 1 tsp. salt
- 1 tsp. fish sauce
- black pepper
- scallions (thinly sliced)
- cilantro (roughly chopped)
- 3 kaffir lime leaves (sliced very thinly, optional)
