Directions
- COMBINE cola, onion and salt in multi-use programmable electric pressure cooker. Stir. Add pork, turning to coat.
- PLACE lid on pressure cooker; twist and lock according to manufacturer's instructions. Place exhaust valve in the Sealing position. Press Manual button and set time for 45 minutes. When cooking is complete, turn off. Allow pressure to release naturally, about 20 minutes.
- REMOVE lid according to manufacturer's instructions. Remove pork from pot. Shred pork using two forks.
- RESERVE 1/2 cup meat juices; discard remaining liquid. Combine fruit spread, barbecue sauce and pepper in pressure cooker. Stir until blended. Press Saute button. Bring sauce to a simmer, stirring occasionally, about 3 minutes. Stir in shredded pork. If necessary, add reserved meat juices, a little at a time, until desired consistency. Sauce will thicken during standing. Add additional meat juices, as necessary. Serve on rolls.
