  • 2 tablespoons oil
  • 1 pound prawns (peeled, heads removed, deveined)
  • 1 onion (peeled and grated)
  • 1 pound tomatoes (chopped)
  • 2/3 cup heavy cream
  • 7 ounces rice noodles (covered in boiling water for 3 mins, drained)
  • 10 spring onions (sliced)
  • 4 tablespoons soy sauce
  • cayenne pepper (to taste)
  • 1/2 cup roasted peanuts (roughly chopped)

    Directions

    1. Heat oil in a frying pan and sauté prawns, turning, for 2 mins. Set aside. Add onion and sauté until softened. Add tomatoes and cook for 2 mins. Add cream, then 1 1/4 cups water. Bring to a boil then gently simmer for 5 mins. Add prawns and spring onions and heat through. Season with soy sauce and cayenne pepper. Toss with noodles. Serve sprinkled with peanuts.
