- 2 tsp. chilli flakes (dried, to taste)
- 1 tsp. cracked black pepper
- 1 tsp. fine sea salt
- 4 tsp. sunflower oil
- 2 tsp. desiccated coconut
- 2 Tbsp. hot curry powder (or medium)
- 2 sweet potatoes (peeled and cut into 1cm/½in cubes)
- 4 cms fresh root ginger (/1½in piece, peeled, cut into long thin strips)
- 1/4 Scotch bonnet chilli (or 1 red chilli, seeds removed, optional, finely chopped)
- 400 grams coconut milk
- 250 mL vegetable stock
- 75 grams sugar snap peas (/2½oz)
- 75 grams baby corn (/2½oz, halved lengthways)
- 225 grams king prawns (raw, peeled jumbo, defrosted if frozen)
- 1 bunch spring onions (trimmed and sliced)
- 1 lime (juice only)
