- 500 grams prawns (medium, about 40 to 50 to a kilogram, cleaned and deveined)
- 2 tsp. cornflour
- 1/2 Tbsp. groundnut oil (+ 1 teaspoon + ½ tablespoon + ½ tablespoon for separate use)
- 1 egg (large lightly beaten)
- 2 medium carrots (cut in a fine dice)
- 1 tsp. garlic paste
- 1 knob ginger (about ½-inch, peeled and sliced into thin rounds)
- 1 green bell pepper (medium, capsicum, diced)
- 1/2 cup green peas (thawed if frozen, or steamed if fresh)
- 3/4 tsp. black pepper (powder)
- 1/2 tsp. salt (or to taste)
- 3 cups cooked rice (preferably cooked the previous day and chilled in the refrigerator)
- 1 Tbsp. light soya sauce (or to taste)
- 1 1/2 tsp. sesame oil (chinese)
- 3 Tbsp. spring onions (sliced at an angle, to garnish, optional)
