- 5 potatoes (large)
- 200 grams duck liver (mousse or pâté)
- truffles
- 1 egg yolks
- 50 grams butter
- ground white pepper

Directions
- Boil the potatoes until soft. Peel and mash, adding the yolk, butter, and white pepper.
- Grease a serving ring and fill with a layer each of mashed potatoes, duck liver mousse, and truffles. Repeat, finishing with a layer of mashed potatoes.
- Broil in the oven and decorate with Pedro Ximenez reduction.
