I used beef chorizo and it turned out great! I plan to mix some leftovers with scrambled eggs in the morning for breakfast burritos.

I used soy chorizo from don francisco brand and it was great! My little 3yo loves it! I did eyeball the potatoes and needed to have cooked them longer. Also because I left the skins on. For next time. I compensated with a little extra olive oil. And covering it as well on low.
