Description
A super simple, 5-ingredient, microwave recipe passed down from my mum. A wonderful addition to any BBQ!
Ingredients

- 6 large potatoes (peeled and sliced)
- 6 hard boiled eggs (large, peeled and sliced)
- 1 sour cream
- 1 can cream of mushroom soup
- 1 Tbsp. curry powder (Keen's)

Directions
- Layer thinly sliced potatoes in a casserole dish and cover with water.
- Microwave on high with lid on for 15 minutes. Drain.
- Add sliced eggs to the casserole dish. Distribute through the layers by lifting the potatoes with a fork.
