- 2 Tbsp. canola oil (or coconut)
- 1 sweet onion (large, chopped)
- 3 stalks celery (chipped)
- 1 large carrot (chopped)
- 3 cloves garlic (minced)
- 1 Tbsp. dried parsley
- 1 tsp. smoked paprika
- 1/2 tsp. celery salt
- 1/2 tsp. chili pepper (smoked, I used Aleppo pepper)
- 2 cups black-eyed peas (frozen, defrosted or canned, I used frozen)
- 8 cups stock (good veggie, homemade or low-sodium)
- 5 yukon gold potatoes (4 to, small, scrubbed well and cubed)
- 1 bunch collard greens (washed, large center stems removed & chopped into bite-sized pieces)
- dumplings (Maple-Cornmeal, recipe below)
- sea salt
- pepper (to taste)
- 3/4 cup cornmeal
- 1/2 cup all purpose flour (* see note below)
- 1/2 tsp. sea salt
- 1/4 tsp. smoked paprika
- 1/4 tsp. cayenne pepper
- 1/4 tsp. black pepper
- 1 Tbsp. maple syrup
- 1/4 cup broth (from the soup, I ended up using about 1/2 cup)
