No potato masher, so peeled n' boiled whole potatoes, then mashed with wooden spoon afterwards. Added impossible meat to the tortilla with potato filling before frying. Very little filling is needed per taco otherwise the tortilla will refuse to fold evenly/properly. Either use less filling or use 1/3 of tortilla, so that the middle can fold. Used guacamole and regret as this dish is thick to taste, better stick with watery green/avocado salsa next time. Topped with thin sliced lettuce. Delicious, thick, feel full but not stuffed, after 7 tacos, and a nice strawberry banana smoothie to wash it down.
