Potato salad is a hearty side dish for any backyard barbecue, holiday potluck or celebration. This recipe that has two servings and takes 40 minutes to prepare, is for Potato Salad with Guacamole. - 2 potatoes (large)
- salt
- 1/2 green bell pepper (julienned)
- 1 tomato (large, sliced)
- 1 avocado (ripe)
- 1 chile pepper (jalapeno, minced)
- 1 clove garlic (minced)
- 1 lime
- ground black pepper
- cilantro (minced)

Directions
- Wash the potatoes and cut into slices 1/2 centimeters in width. Boil in cold water with salt until softened. Drain well and rinse with cold water. Let cool completely.
- Mash the avocado with the onion, jalapeno, garlic, lime rind and juice. Salt and pepper and set aside.
- Place the potatoes on a plate and layer tomato and green pepper. Season with salt and pepper. Serve with a generous scoop of guacamole and sprinkled with cilantro.
