- 2 leeks (cleaned and sliced, you want about 1 1/2 cups leeks. My leek was very large, so I only used one)
- 4 cups water
- 1 Tbsp. chicken base (I use Better Than Bouillon)
- 1 Tbsp. cornstarch
- 6 yukon gold potatoes (peeled and diced, about 4 cups)
- 2 cups heavy cream
- salt
- pepper
- shredded cheddar cheese (optional)

Have made this 3 times in 2 weeks, everyone who has tasted it loves it. Added fresh garlic and smoked paprika. Also added fresh asparagus, fantastic variation. Reduced butter by half a stick.

I agree with Kyla, this recipe really benefited from the following additions:
Smoked Paprika - about 2tspn (I just kept adding it dash by dash and tasting it as I went, stopping when I got the hint of heat at the back of my throat that I was after)
Sage leaves - I used 8x from the garden
A dash of liquid smoke
Garlic - I added 8x whole
Red onion - 2x sliced and wilted with the leaks

The recipe makes a decent, but bland soup. However, once I added garlic, sage, and paprika, it was really quite delicious.

amazing!! i added spicy ground sausage and it took the soup from a 10 to an 11!!
