- 2 aubergines (cut into 1cm cubes)
- 2 courgettes (cut into 1cm cubes)
- 2 peppers (cut into 1cm cubes)

- 2 kilograms potatoes (peeled and finely sliced)
- 4 cups tomato sauce (good ready made)

My daughter’s favourite. Made a number of times. We preferred to swap out the egg plant and add broccoli or cauliflower.
