- 1/2 onion (chopped)
- 1 lb. kielbasa (fully cooked, cut into pieces)

Decent but trying again with variations. Using small diced potatoes (think small breakfast potato firmness), and only half as many. Cook onion and meat first, otherwise it takes too long because there is too much in the pot. Once those are browned set aside then do the potatoes in oil, stirring very infrequently to get that nice hash brown crisp. Finally fold back in meat and onion, stir, add seasonings, stir, add spinach, then turn off heat and let sit a few minutes.
