  • 200 grams flour
  • 4 egg yolks
  • 50 grams olive oil
  • 80 grams Parmesan cheese (grated)

  • 1 cup spinach
  • 2 teaspoons pesto (dried tomato)

    Directions

    1. Place potatoes in baking dish on a layer of coarse salt, bake at 150 degrees Celsius until a knife easily pierces the potatoes
    2. Peel, then measure out 400 grams of the potatoes. Press the potatoes through a sieve so they become smooth, place in a bowl.
