- 1 1/2 lb. russet potatoes (cut into thinish wedges)
- 12 oz. beer (Irish, or your favorite beer)
- 1 Tbsp. flour
- 2 tsp. seasoned salt
- 1 tsp. pepper
- 1/4 cup olive oil
- 1 1/2 lb. white fish (cut into strips, I used mahi mahi)
- 1 1/3 cups potato chips (finely crushed)
- 2/3 cup corn flakes (finely crushed)
- 1 tsp. seasoned salt
- 1/2 tsp. cayenne pepper
- 1/4 tsp. pepper
- 4 Tbsp. melted butter
- 1/3 cup buttermilk
- lemon wedges (malt vinegar + fresh parsley, for serving)
- peas (minted mashed, for serving (my quick version is the notes))
- 1/2 cup mayo (I either make my own or buy the olive oil based mayo)
- 1/4 cup plain greek yogurt
- 2 tsp. Dijon mustard (grainy)
- 1/2 red bell pepper (finely chopped)
- 1 green onion (chopped)
- 2 cloves garlic (depending on your taste)
- 1/4 cup chopped fresh parsley
- 1 tsp. cayenne pepper (to your taste)

- 3 oz. crumbled blue cheese
