- 250 grams chapatti flour
- 125 mL warm water
- 1 Tbsp. coriander (chopped)
- 1 pinch salt
- vegetable oil (to deep fry)
- 6 black peppercorns
- 3 tsp. coriander seeds
- 1 tsp. cumin seeds
- 4 cardamom pods (seeds removed)
- 1/2 tsp. turmeric
- 1 tsp. fenugreek seeds
- 1 pinch chilli flakes
- 1 Tbsp. vegetable oil
- 1 onion (diced)
- 4 cloves garlic (puréed)
- 1 red chilli
- 2.5 cms root ginger (/1in piece, grated)
- 400 grams chopped tomatoes
- 6 tomatoes (chopped)
- 150 grams red lentils (/5½oz, soaked)
- 400 grams potatoes (peeled, cubed, approx 4-5cm/1½-2in and blanched)
- 400 grams chickpeas
- 1 lime juice (only)
- 1 handful coriander leaves

Directions
- For the puris, mix the chapatti flour, water, coriander and salt together in a bowl to form a dough. Cover the dough in cling film and chill in the fridge for 20 minutes.
- For the spice mix, heat a frying pan over a medium heat. Add the peppercorns, coriander seeds, cumin seeds and cardamom seeds and dry fry for 2-3 minutes or until fragrant.
- Transfer them to a mortar and pestle with the other spices and grind to a powder.
