- 4 Tbsp. rose petals (dried)
- 1 Tbsp. ground cumin
- 1/2 Tbsp. ceylon cinnamon
- 1 Tbsp. dried lime powder (if you do not have you can sub 1 more T sumac)
- 1 Tbsp. coarse sea salt
- 6 lb. beef chuck (with or without bone)
- 2 Tbsp. olive oil
- 1 cup water
- 3 lb. fingerling potatoes (I liked using 3 different colors)
- 1 lb. crimini mushrooms (sliced)
- 2 onions (medium-large, sliced into thick wedges)
- chopped flat-leaf parsley (for garnish, optional)
