  • 1/2 tablespoon ceylon cinnamon
  • 1 tablespoon dried lime powder (if you do not have, you can sub 1 more T sumac)
  • 1 tablespoon coarse sea salt
  • 6 pounds beef chuck (with or without bone)
  • 2 tablespoons olive oil
  • 1 cup water
  • 3 pounds fingerling potatoes (I liked using 3 different colors)
  • 1 pound crimini mushrooms (sliced)
  • 2 onions (medium-large, sliced into thick wedges)
  • flat leaf parsley (chopped, optional)
