- 1 lb. sweet potatoes (peeled and cut into chips)
- 2 Tbsp. vegetable oil
- 3 oz. bread (slightly stale)
- 4 Tbsp. chopped parsley (fresh)
- 6 oz. cod fillets
- 1 lemon
- 1 Tbsp. plain flour
- 1 medium eggs (beaten)
- 8 oz. frozen peas
- 40g (1½oz) Flora pro.activ spread (1½oz)
- 1 Tbsp. capers (chopped, optional)
- 1 Tbsp. mint leaves (fresh, chopped)
- 1 1/2 Tbsp. low-fat natural yogurt

Directions
- Preheat oven to 200ºC (fan oven 180ºC)/gas mark 6.
- Toss the chips in half the oil and spread evenly over a baking sheet. Bake in the oven for 40 minutes.
- Meanwhile prepare the fish by placing the bread, half the parsley and lemon zest in a food processor and blitz until like rough breadcrumbs.
