- 5 Tbsp. olive oil (divided)
- 2 cups chicken broth
- 1/2 cup water
- pepper

- 1 cup apple cider
- 1 Tbsp. light brown sugar
- 1/4 tsp. ground cinnamon
- 1/2 yellow onion (peeled and sliced into 4 large crescents)
- 20 garlic cloves (peeled and left whole)
- 1 apples (peeled, cored and sliced into 8 crescent sections, I used Granny Smith)
- 6 figs (left whole)
- 4 medjool date (left whole)
- 1/4 tsp. fresh leav thyme
- 1 Tbsp. pomegranate seeds
