  • 3 pounds pork roast (bone-in)
  • 1/3 cup apple cider vinegar
  • 5 cloves garlic (minced)
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 cup beef stock
  • 3 tablespoons lime juice
  • 4 ounces chipotle salsa
  • 1 bag chips (nachos)
  • 8 ounces shredded cheese (mexican blend)
  • 1 can chili beans
  • 1 tomato (diced)
  • 4 ounces jalapeno
  • 4 ounces black olives
  • 4 tablespoons buffalo wing sauce (Frank Red Hot)
  • 1/2 cup blue cheese crumbles

    Directions

    1. The pork for this is made in the slow cooker so place it into your slow cooker. Combine all your pork marinade ingredients and pour over the roast. Let cook on low for 6-8 hours.
    2. Shred pork when it has cooked thoroughly. Remove and discard any bones.
    3. Add chips to greased baking sheet.
