  • 1 1/2 pounds pork tenderloin
  • mango salsa (Spicy)
  • 2 mangoes (small, diced)
  • 1 avocado (diced)
  • 1 cucumber (small, diced)
  • 2 tablespoons lime juice
  • 3 spring onions (finely sliced)
  • 1 red chili (finely chopped)
  • mixed greens (to serve)

    Directions

    1. Heat oil in a large frying pan over medium heat. Season pork then cook for 10-15 mins, turning, until browned and cooked to your liking. Let rest, covered, for 5 mins.
    2. Meanwhile, to make the spicy mango salsa, combine all ingredients. Season.
    3. Slice pork thinly. Serve with salsa and mixed greens.
