It was good, but I think 25 min in a 425° oven is way too long after you've already seared it on all sides. Took it out after 20. But should have taken it out after 15

Pork was very tender and moist. Did not have a dutch oven, so browned the pork in a frying pan per the the instructions. Transferred to a baking dish and covered with tin foil. Will probably double the gravy mixture to have with mashed potatoes.
