- 2 lb. pork tenderloin (1 large or 2 smaller tenderloins)
- 5 garlic cloves (minced or pressed)
- 3 Tbsp. chopped fresh sage (finely, or 1 tablespoon dried)
- 1 tsp. sea salt (or kosher)
- 1/4 tsp. freshly ground black pepper
- 1/4 cup olive oil (plus 2 tablespoons)
- 3 cups water
- 1 lb. tomatillos (husked and thoroughly rinsed)
- 2 garlic cloves
- 2 serrano chilies (or jalapeño chilies, or to taste)
- 3/4 cup pumpkin seeds (hulled raw, pepitas)
- 1/2 tsp. sea salt (or kosher, or to taste)
- 1/2 cup white onion (coarsely chopped)
- 3 romaine lettuce leaves (torn into pieces)
- 1 1/2 cups fresh cilantro leaves (and upper part of stems)
- 1 cup parsley leaves (fresh flat-leaf, and upper part of stems)
- 2 Tbsp. canola oil (or safflower oil)
- 1 1/2 cups juices (meat, from the cooked tenderloin or substitute chicken broth, homemade or store-bought, or water)
- 12 radishes (good-size, trimmed and cut into matchsticks, 2 cups)
- 1 Tbsp. lime juice (freshly squeezed)
- 2 Tbsp. olive oil
- 3/4 tsp. sea salt (or kosher, or to taste)
- 12 corn tortillas
