  • 2 tablespoons vegetable oil
  • 1 1/2 pounds ground pork
  • 1 bunch spring onions (trimmed, halved and cut into 2 inch pieces)
  • 2 cloves garlic (peeled and thinly sliced)
  • 1 inch ginger (piece, peeled and finely chopped)
  • 2 red chili peppers (large, deseeded and sliced)
  • 5 tablespoons oyster sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 ounces fresh basil (shredded)
  • 1 ounce fresh cilantro (shredded)
  • rice noodles (cooked, to serve)

    Directions

    1. Heat the oil in a large wok or frying pan and add the ground pork. Cook over high heat 6-8 mins, stirring, until browned. Add the spring onion, garlic, ginger and chili pepper. Stir-fry 2-3 mins. Add the oyster and fish sauce, sugar and 6 tbsp water. Bring to a boil, stirring, and simmer 1 min until sauce thickens slightly. Stir in the basil and cilantro and serve with the rice noodles.
