The meat came out excellent. I used pork tenderloin and kept it warm on a rack in a 200° oven while I made the sauce. I used homemade, sodium free chicken stock. The sauce turned out WAY too salty. I think the salt from the pork coating is plenty. I will leave it out of the sauce next time.

This was fantastic, and my first time making schnitzel with pork. I used a pork loin and the husband cut it very thin, so I didn't need to pound it. The panko crumbs made it so crunchy. Even the kids ate every crumb!
