- 1 lb. pork loin (cooked, cut into thin strips)
- 2 cups celery (diced)
- 1/2 cup raisins
- 1 apple (cored and diced)
- 1/4 cup dry roasted peanuts (coarsely chopped)
- 1/2 cup yogurt (plain)
- 1/2 tsp. curry powder (or to taste)

Directions
- In large mixing bowl toss together pork, celery, raisins, apple and peanuts. Combine yogurt and curry powder. Spoon over salad, stirring lightly to coat. Serve immediately or cover and refrigerate overnight.
