- 2 Tbsp. butter

- 1 bunch radishes (about 225 g)
- 1 Tbsp. sage leaves (slightly bruised)
- 1 tsp. sage (chopped, or very small sage leaves)
- 1 bunch radish greens
- 1 apple (pink pearl, see note)
- 1/4 cup apple cider vinegar
- 1 Tbsp. honey
- 1 tsp. red wine
- 1 pinch ground cardamom
- 1 pinch ground cinnamon
- 1/4 cup red wine (to deglaze the pan and finish the sauce)
