The caramelized orange sauce seals in the juices, making this piece of meat tender and succulent. The orange sauce adds just the right amount of sweetness to complement the pork.

- olive oil
- 3 oranges
- 2 onions (large)
- 1 cup cognac
- 2 Tbsp. orange marmalade
- 4 Tbsp. sugar
- black peppercorns
- bay leaves
- cinnamon

Directions
- Sprinkle the pork with salt and cinnamon. Pour a little olive oil into the bottom of a pressure cooker and saute the pork loin slightly. Add the cognac and allow the alcohol to evaporate slightly.
- Add the onion, orange juice, bay leaf, and pepper, and cover the pork halfway with water.
- Cook in the pressure cooker for 30 minutes, turn the meat, and cook for 10 minutes more, adding more water if necessary.
