- 350 grams salt (any salt is fine as we’re dissolving it)
- 300 grams brown sugar
- 2 Tbsp. pickling spice (see below)
- 40 grams pink salt
- 1/4 cup honey
- 5 garlic cloves (smashed and flattened)
- 2 Tbsp. black peppercorns (coarsely ground)
- 2 Tbsp. mustard seeds
- 2 Tbsp. coriander seeds (coarsely ground)
- 2 Tbsp. hot red pepper flakes
- 2 Tbsp. allspice berries
- 1 Tbsp. mace (ground)
- 2 cinnamon sticks (small, broken into small pieces)
- 4 bay leaves (crumbled)
- 2 Tbsp. whole cloves
- 1 Tbsp. ground ginger
- 1/2 cup coriander seeds (coarsely ground)
- 1/2 cup black peppercorns (coarsely ground)
