- 9 stalks rhubarb (fine diced)
- 5 mangos (each, fresh, diced)
- 1/4 cup apricot preserves
- 10 dates (each, fine diced)
- salt
- pepper
- 1 bunch cilantro leaves
- 1/2 cup mint
- 1/2 jalapeno chile (seeded)
- 1 clove garlic
- 2 lemon juice (each, fresh squeezed)
- 3 Tbsp. water
- 1 Tbsp. brown sugar
- salt
- pepper

- 1. In sauté pan, heat oil & sweat rhubarb
- 2. Remove from heat & fold in remaining ingredients
