  • 1/2 tablespoon vegetable oil
  • 4 pork chops
  • 12 baby potatoes (quartered)
  • 2 carrots (peeled, thinly sliced on a bias)
  • 2 spring onions (thinly sliced)
  • 3 cloves garlic (minced)
  • 10 1/2 ounces fava beans (frozen, thawed)
  • 2 tablespoons fresh flat leaf parsley (chopped)
  • 2 tablespoons fresh mint (chopped)
  • 2 teaspoons orange zest

    Directions

    1. Preheat oven to 425°F.
    2. Heat 1 tbsp oil in a large Dutch oven over high heat. Cook pork for 2 mins per side, or until browned. Set aside. Add potatoes, carrots, onions, 2 cloves garlic and remaining oil and toss to combine. Season. Roast for 15 mins. Add pork and roast for another 10 mins.
    3. Meanwhile, blanch fava beans for 2 mins. Peel. Add to pan and roast for another 5 mins, or until pork is cooked to your liking.
    4. Combine parsley, mint, orange zest and remaining garlic. Sprinkle over pork and vegetables. Serve.
