- 1 sweet onion (small, or ½ large sweet onion, peeled and finely diced)
- 2 tart apples (small, such as Pink Lady, peeled, cored, and finely diced, I used Gala)
- 1 Tbsp. coconut oil
- 1 Tbsp. honey (omit for Whole30--it's still delicious!)
- 1/4 tsp. canela
- 1/4 tsp. nutmeg
- 1 lemon (since I omitted the honey, I only juiced half the lemon and the sweet-tart balance was perfect)
- 1 pinch sea salt (my addition)
- 2 Tbsp. coconut oil
- 4 pork chops (thick-cut pastured, loin or rib end)
