- 1 Tbsp. butter
- 2 Tbsp. olive oil
- 12 oz. white mushrooms (sliced)
- 1 large shallot (or 1/2 small onion diced)
- 1/4 cup sherry (sherry you would drink or white wine, ditto)
- 1 cup chicken stock (plus more to puree)
- 1 sprig fresh thyme
- 1 pinch cayenne
- 1/2 cup cream
- 3 drops truffle oil (or a sprinkle of truffle salt, optional but wonderful)
- 1/2 tsp. kosher salt (to taste)
