- 2 Tbsp. vegetable oil (or olive oil)
- 4 Tbsp. butter (or substitute oil)
- 8 oz. white mushrooms (sliced, about 2 cups)
- 2 yellow onions (small, thinly sliced, or one large)
- 3 garlic cloves (minced)
- 1/4 tsp. dried thyme
- 1 cup chicken stock
- 1 Tbsp. corn starch
- 1/4 cup half and half
- 2 cups baby spinach (tightly packed, see notes)

This is very good!! It’s quick and full of flavor I’ll definitely make it again. A few things I did differently, didn’t have spinach so left it out and mistakenly reached for dried rosemary instead of thyme. Made orzo to go with the sauce. I won’t use canned soups again after learning this trick

used very thick pork chops, bone in. so times needed adjusting. used 5-6 cups of spinach. as with most recipes, season more and each step. came out very good... will keep perfecting.
