  • 2 pounds boneless pork shoulder
  • 4 tablespoons Mazola Corn Oil
  • 1/2 cup onions (chopped)
  • 1 teaspoon Spice Islands Garlic Powder
  • 2 tablespoons Spice Islands Chili Powder
  • 1/2 teaspoon Spice Islands® Chipotle Chile Powder
  • 4 tomatillos (finely chopped)
  • 1 cup chopped tomatoes (finely)
  • 1/2 cup chopped fresh cilantro (coarsely)
  • 8 corn tortillas

    Directions

    1. Cut pork into 1 inch cubes; season with salt and pepper. Heat oil in large skillet or Dutch oven.
    2. Add pork, onions, garlic powder, chili powder and chipotle chile; sauté 3 to 5 minutes to brown the meat.
    3. Add enough water to almost cover pork.
