I'm really picky on my carnitas. This was the best recipe so far.
Pretty much stuck to the recipe, but I modified the spice amounts to my taste. Also used the Instant Pot instead - so added more orange juice.
The kids went back for seconds. A keeper for sure.

I’ve made this pork a couple of times; it’s such a standout recipe! Between the citrus, (Mexican) Coke Cola, and the crisping finish, they are unique and delicious.
Update: Made it again. Still LOVE it. This time I marinated everything together in a large ziplock the night before...even more flavor!

I only made a half recipe, next time i think I'm going to spring for the real sugar Coke.
