- 2 carrots (julienne cut into matchsticks or sliced if that's easier or you)
- 150 grams snow peas
- 2 cloves garlic (chopped fine)
- 1 ginger (thumb sized piece of, chopped fine)
- 1/4 cup soy sauce
- 1 Tbsp. honey
- 1 whole lemon juiced
- 1 tsp. cornflour (/cornstarch)
- 4 sprigs mint leaves (finely chopped)
- 1 scallion (spring onion, sliced thinly)
