I love this author’s adobo recipes! This one was especially delicious!
I used pork carnitas meat instead because it was on hand, and instead of the 2 cups water I used a regular 7-up
It carmelised down into a sticky dry adobo …perfect for my tangy cravings !
I also found a Dutch oven to be the best pan for not burning the meat while allowing it to crisp up
Again, I used carnitas pork so may not be same for pork belly
Loved this recipe and continue to love it a little too much !

This recipe was amazing! First of all....it is important to know how to cook with pork belly. Pork belly is full of flavor but can be difficult to work with if you have not cooked with it before. It is very fatty....but if cooked properly that fat should melt in your mouth rendering more intense flavors from cooking. I marinated my pork belly over night. Cooking the pork belly in the leftover marinade gives the meat so much flavor. Then....when adding my peppercorn and bay leaves, I used a Thai Culinary Stock instead of water for added flavor along with some chopped onions. I also added some garlic chili paste with the white vinegar for the last 30 minutes of simmering. No need for any additional salt or sugar. This recipe was delicious! I highly recommend it!

Yum! Added a little bit of sugar, added onions, and let it boil longer than 40 minutes to soften more.

Turned out pretty good. Had to add some sugar, though, as it was too salty for our taste.
