- 2 bunches asparagus (trimmed and cut into 3 pieces)
- 1 lemon (juice only)
- 250 grams salsify (trimmed and cut into 1cm pieces, see note)
- 20 grams butter
- 2 shallots (golden, thinly sliced)
- 50 grams almonds (roasted and halved widthways)
- 250 grams baby spinach (washed and dried)
- 500 grams rock salt
- 400 grams potatoes (desiree)
- 50 grams dried porcini (soaked in boiling water overnight)
- 125 grams 00 flour (see note)
- 1 egg (lightly beaten)
- olive oil (For drizzling:)
- 250 grams unsalted butter (chilled, coarsely chopped)
- 1/2 lemon juice (only)
