    This was my first ever porchetta. The experience of making this dish is filled with such excitement! Using extremely aromatic herbs to rub the meat made something that has always been forbidden since childhood (handling food without tools or gloves) such an invigorating and memorable moment Not to mention tying up the meat and proceeding to slap my herb paste all over the fat! The experience of eating my first porchetta was as memorable as making it. It was delicately moist and filled with a flurry of similarly delicate tastes. The herbs accentuated the sweetness of the pork, which was very well complimented with a sauvignon blanc. All-in-all an absolutely wonderful Saturday afternoon in the kitchen, and evening at the dining table.

    amazing! didnt change a thing other than i could only get boneless pork rib roast. Made it with italian style peppers and onions from yummly as well. amazing!
